Inspired by its roots in the bohemian Colonia Condesa, La Condesa will host its first-annual collaboration dinner with guest chefs from Ciudad de Mexico on Monday, August 28th.

 

Explore the diverse flavors of our southern neighbor with a seven-course menu created in collaboration with guest chefs Joaquin Cardoso and Sofía Cortina of Hotel Carlota,

a luxury boutique hotel in the Cuauhtémoc District of Mexico City.


After the night's over, come back for more: La Condesa will continue to offer a dish from the special menu for a week following the event. A portion of its proceeds will be donated to Fresh Chefs Society, an Austin nonprofit that connects foster care youth with the art of cooking.

MEET THE GUEST CHEFS

Joaquin Cardoso, Executive Chef, Hotel Carlota


Joaquin Cardoso began his culinary career with 8 years in France, working with Jean-François Piège at the Crillon Hotel, followed by Hotel Thoumieux and then with Chef Iñaki Aizpitarte at Le Chateaubriand. Joaquin has interned under many notable chefs, including Alain Ducasse at Hôtel Plaza Athénée, Alains Senderens at Lucas Carton, René Redzepi at Noma, and Christian Puglisi at Relae. He returned to Mexico City and worked with chef Enrique Olvera before opening Hotel Carlota.

 

Sofía Cortina, Pastry Chef, Hotel Carlota

 

Sofía Cortina began her career as a stagier at Enrique Olvera's restaurant, Pujol, where she was hired full-time and worked for three years. In 2013, she traveled to Barcelona and studied at Espai Sucre while working at Asian fusion restaurant Dos Palillos. From there, Sofía went to Paris for three months as a stagier at Pierre Hermé. She then returned to Pujol before becoming the pastry chef at Hotel Carlota. Sofía also serves as the pastry creative chef for modern Mexican restaurant Peyote, which has locations in London, Ibiza and Dubai.
